You are what you eat...Baked eggs with feta & spinach

This post is slightly left off centre but I actually need your help!
Recently I've been feeling a bit blah. I haven't had the kind of energy and "joie de vivre" that I normally have and that's thrown me off my A-game. I'd always been used to bouncing with enthusiasm from one activity to another.
Could the old adage "you are what you eat" be catching up with me?
Not that I shovel junk food in to my body as my main diet, but I sure could improve it. I do eat way too much carbs (after all, I grew up on noodles and rice. And then moved to Australia and discovered pasta), love fried goods and sneak in bits of chocolate here and there.
It got me thinking - I spend so much time on this blog on dressing & thinking successfully - but I've missed a trick. To really be complete, I need to also focus on FOOD.
Think well, dress well and eat well.
My new mantra.
I've always talked about styling your wardrobe and mindset to be successful & happy. But there is no successful life without a healthy body and while I'm no clean eating expert, I'm definitely going to give healthy eating a crack.
The first port of call is breakfast. And right now I'm addicted to baked eggs.
Baked eggs are a super way to enjoy a savoury brekkie without the fat you get from a traditional fry-up. (Also, it's a great way to do a breakfast for a big group).
Baked eggs - the how
Remember, this isn't a recipe blog so there won't be precise measurements or instructions here. Just a general gist instead of specifics (which is also how I like to live my life).
In essence, I took a muffin tray, lightly sprayed it with olive oil and lined each hole with a piece of ham.
At the bottom of the ham "cup" I popped in some baby spinach, cracked an egg in to each cup and topped it with feta and semi-dried tomato. It then went in to the oven for a few minutes until my egg was cooked to my liking.
You could really go to town and use your imagination here - top it with anything you want - olives, herbs, cheese.
Now -I need your help!
Firstly - I've ordered a new high speed blender to do daily green smoothies. Any recipe ideas or suggestions?
